&lt;p&gt;&lt;a href="http://en.wikipedia.org/wiki/Xavier_High_School_%28New_York_City%29"&gt;Xavier High School&lt;/a&gt;, (pronounced Zay-vyer) which is on 16th Street between 5th and 6th, was my high school’s rival.  I went to &lt;a href="http://en.wikipedia.org/wiki/Regis_High_School_%28New_York_City%29"&gt;Regis High School&lt;/a&gt;, which is on 84th between Park and Madison.&lt;/p&gt;
&lt;p&gt;Both Xavier and Regis are all-boys Jesuit high schools.  Each has a different reputation amongst the Jesuit high schools in the city, though.  Xavier, which has been around since the 1840s, is kind of like the bigger, more aggressive older brother to Regis, which has (only) been around since 1914.  I say they’re ‘bigger’ because its enrollment is twice as big as Regis; ‘more aggressive’ because their JROTC program is a big part of their identity.  They also have a reputable sports program.  You also pay tuition.&lt;/p&gt;
&lt;p&gt;Regis, in contrast, is a scholarship school (READ: FREE), but the entry requirements are more rigorous.  You get hand picked by your grammar school teachers to apply and take a standardized test administered by Regis.  Then, if you do well enough, you get interviewed by an alumni and a current teacher. If they liked you, you got accepted.  If they didn’t like you, you went to Xavier.&lt;/p&gt;
&lt;p&gt;Our sports teams were excellent when I was there, but they weren’t in the same division — literally, in a lot of cases — as Xavier.  Regis is the smarter younger brother.&lt;/p&gt;
&lt;p&gt;(Sidenote: In order for Regis to give free tuition to all its students, it has a sizeable financial endowment.  It also solicits its alumni for donations frequently.  The joke was that while it was free to go to school there for four years, the alumni office got you to pay tuition for the rest of your life.)&lt;/p&gt;
&lt;p&gt;Each side sort of had a chip on their shoulder about how they were perceived by the other school.  We at Regis thought we were smarter than everyone, so Xavier students were “assholes” to us; Xavier students, meanwhile, thought of us as “fags.”  Ah, high school.&lt;/p&gt;
&lt;p&gt;The academic standards at Regis were extremely high — everyone takes AP classes in every course and every graduating class would have at least a dozen people going to Ivy League schools the following year.  I enjoyed my time at Regis, but the one thing I’ll say about it is that it seemed to breed a particular type of young man — one who was good at studying, and only studying.  There are exceptions to this, but it’s mostly true.  These people are so good at studying that that’s all they do for the rest of their lives, because that’s their only skill.  They’re not good at a particular talent like writing or acting or comedy.  And they have no imagination — they’re just good at studying.  So they study and study and study.  They go to grad school, medical school, law school… Regis was great at creating people who study.&lt;/p&gt;

&lt;p&gt;I was born in The Philippines and lived there until I was eight.  Filipino food is influenced by flavors of the region (Southeast Asia) and Spain, which was the imperial presence there for hundreds of years.  Flavors are very savory and powerful; there’s not a lot of subtlety.  Here’s what everything is:&lt;/p&gt;

&lt;b&gt;Rice:&lt;/b&gt; Uh, rice.  Filipinos usually eat long grain white rice with meals, although I do remember eating brown rice occasionally as a kid.  You’re not a Filipino if you don’t own a rice cooker.&lt;/li&gt;

&lt;b&gt;Pansit:&lt;/b&gt; Filipino noodles.  There are different kinds, but it’s usually eaten with a topping of vegetables and meat.  Not a broad noodle.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Chocolate meat:&lt;/b&gt; The name of the food is “dinuguan.”  The less you know about this food, the better.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Adobo:&lt;/b&gt; A lot of non-Filipino people know adobo as a flavor.  We put it most often on chicken or pork.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Lumpia:&lt;/b&gt; Filipino version of the spring roll.  Generally smaller than a Chinese spring roll.  Again, there are many different kinds, but I most often ate Lumpia Shanghai, which has meat and vegetables inside.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Chicaron:&lt;/b&gt; Good ol’ pork rinds.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Shrimp chips:&lt;/b&gt; AKA “kropek.”  They’re kinda like chicaron (they’re deep fried), but instead of pork these are made of prawns.  Not kidding.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Processed meat:&lt;/b&gt; Yup, spam.  I remember having spam a lot (pun!) as a kid.  It was good!&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Balut: &lt;/b&gt;A fertilized duck or chicken egg with a partially developed embryo.  It’s hard-boiled, then you eat it in its shell.  I know it sounds and looks horrible — I remember being super upset as a kid when my parents would eat them — but they are good!&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Longanisa:&lt;/b&gt; Filipino sausages.  Kinda like chorizos.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Lechon:&lt;/b&gt; Suckling pig!  A staple of any big family gathering.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Spaghetti (&amp; hot dog):&lt;/b&gt; Exactly as it sounds — spaghetti with meat sauce and sliced hot dogs in the sauce.  Very much of a Filipino take on a non-Filipino food.  This is how my family makes spaghetti and I actually prefer it this way.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Banana ketchup:&lt;/b&gt; It looks like ketchup, but it’s not made from tomatoes.  It uses bananas and other spices.  Apparently, it’s sweeter than regular ketchup.  I don’t really eat ketchup, so I’m not sure if it’s better.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Mango:&lt;/b&gt; Uh, mango.  We’ve eaten it both ripe (orange) and unripe (green), usually with something called &lt;i&gt;bagoong&lt;/i&gt; (shrimp paste).&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Coconuts:&lt;/b&gt; I remember drinking coconut juice often, but only occasionally having the actual coconut meat.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Halo Halo:&lt;/b&gt; “Halo halo” literally means “mix mix” in Tagalog and that’s essentially what this is — a mix of diced sweet beans, fruit, gelatin, and other sweets with crushed ice.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Leche flan:&lt;/b&gt; Basically creme caramel, but with some slight Filipino variations.  It’s awesome.&lt;/li&gt;
&lt;li&gt;
&lt;b&gt;Ube &amp; ube products:&lt;/b&gt; “Ube” means “yam” in Tagalog — specifically, purple yam.  It’s cooked with sugar and sweetened, so it’s primarily a desert.  Some variations (like the ice cream version) have coconut as a topping.  Also one of the ingredients of Halo halo.&lt;/li&gt;
